Landaff, NH was named after the Bishop of Llandaff, Wales, chaplain to England’s King George III. We were fascinated by the historical link and wanted to make a cheese traditional to that area of Wales. We named our cheese “Landaff Cheese” and have based it on a recipe Doug learned from Chris Duckett and Dr. Jemima Cordle. Chris Duckett was a 3rd generation cheese maker from Somerset England who had kept the tradition of Welsh farmstead cheese.

Landaff Cheese is a semi-firm cheese with a delicious combination of flavors, tangy with a buttery texture and a natural cave-aged rind. It melts beautifully and makes a wonderful addition to any cheese plate. Cheese is aged, marketed and distributed at the Cellars at Jasper Hill. www.cellarsatjasperhill.com Value added product with established market and this arrangement is an option for future owners.

The farm consists of approximately 170 acres: 15 acres of permanent pasture, 70 acres cropland chopped for grass haylage and corn silage and 70 acres of managed wood lots and wildlife habitat. All in current use tax base. The pastures are in 7 fields for rotational grazing during the summer and 2 additional fields across the road for heifers. Existing fences and roads between pastures as well as water tubs available in every field and are in good condition. We rent ~60 additional acres grass and corn ground. We usually grow enough silage and purchase ~140 large round bales of 1st cutting to supplement our TMR.

There are two houses on the property. One is a 4 bedroom house with a room for office and 1 ½ baths. Nice deck on the backside, overlooking a large lawn. The other is a 4 bedroom house with office, attached to the creamery with 2 full baths and pool. Both are farm houses dating back to the mid 1800’s. Both houses have drilled artesian wells.

Springvale Farms was founded in the 1950’s by Doug's parents, Dr. and Mrs. Fredrick A. Erb, DVM, who purchased and combined the land from several small farms in Landaff, NH. In 1980 Doug and Deb returned to Landaff and worked for them for several years. By 1989 we had purchased the cows and equipment and started out on our own. Since then we have made many updates to the facilities and large improvements in the genetics of the herd, which result in a higher quantity and quality of milk production. In 2010, ‘12 and ‘16 our farm was the 1st place quality award member, in our region of our cooperative, Agri-Mark. In 2016 we were 3rd overall top quality producer for Agri-Mark.

Landaff Creamery was built in 2008 with the intention of creating a high-quality value added raw cow’s milk cheese that would increase the sustainability of our farm and help preserve agriculture in our small town. The creamery is located next door to the farm in the building where Doug’s father, Dr. Frederick Erb used to have his Veterinary Practice prior to his retirement. The clinic was completely redone into a modern creamery that meets all regulations for high-quality cheese making.
